When in doubt, Mac n’ Cheese will always go down a treat at any festive feast. Try this easy recipe from Ooni ambassador Mike (@pizzainthesac), which uses cottage cheese and yoghurt to add a super creamy, moist texture. Flamed cooked in Ooni pizza ovens for a caramelised cheesy crust.

Equipment
Ooni Cast Iron Skillet Pan

Ingredients
113g (4oz) elbow macaroni
113g (4oz) sharp cheddar cheese, grated
170g (6oz) cottage cheese
133g (4oz) greek yoghurt/sour cream
Pinch dried mustard powder
Pinch paprika
Pinch salt and pepper
⅓ stick butter
Parmesan/Romano cheese, to taste

Method
Fire up your Ooni pizza oven. Aim for 200-250˚C (400-500˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.

Cook your macaroni noodles for 6 mins in salted boiling water, or al dente according to the box.

In a large bowl, combine the cottage cheese, yoghurt, mustard powder, paprika, salt and pepper.

Drain the cooked noodles and add to the cheese mix. Stir to coat the macaroni well.

Grease your Ooni Cast Iron Skillet Pan with butter, then turn your pasta mix into the pan. Use a spatula or back of a spoon to coat the mixture evenly. Cover with aluminium foil.

Place the pan in your Ooni pizza oven at the farthest corner from the flames. Turn the pan every 5 minutes, and after 20 mins remove the foil and top with a couple cubes butter and fresh grated parmesan to taste. Return the pan for a further 5-10 minutes or so, until the top is caramelised and golden brown to your liking.

Remove the pan and serve right away for a true festive treat!
