Homemade Stuffing

Without the humble stuffing, no holiday feast is complete. Whatever your celebration, a good roast deserves a portion of these satisfyingly savoury-sweet balls of crunchy goodness. Cook in your Ooni pizza oven for a perfectly crisp outside and soft inside!

Ooni Cast Iron Pan

Serves 4-5

1 red onion, peeled and finely chopped
1 tbsp vegetable oil
3 tbsp dried cranberries
1 tbsp fresh sage, finely chopped
80g fresh breadcrumbs
Salt and pepper to season
1 egg, beaten

Fire up your Ooni pizza oven. Aim for 300˚C (572˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.

Place your cast iron pan inside the oven with a splash of oil to heat. After a couple of minutes, add your chopped onion and return to the oven. Cook until soft, for 1-2 minutes and turning halfway.

Once soft, remove the pan from the oven and add the sage, cranberries, and breadcrumbs. Season generously with salt and pepper. Next, slowly add the beaten egg to bind the mixture. Don’t worry if you don’t need to use it all.

With your hands, roll the mix into small balls. Place back in the pan and return to the oven to cook for 2-3 minutes, or until brown and crisp on the outside. Give the pan a shake halfway through to ensure an even cook all round.
